Global Chef Sharing the International Flavors of Sodexo

Come meet Chef Cándido Filgueira Novas, executive chef from Spain!

Cándido Filgueira Novas comes from a traditional family of cooks and bakers from Galicia. He, as well as some others in his family, learned to love the art of cooking while going from helping out when young, to being the cook or baker himself.

At the age of 26, and after the Civil War in Spain, Cándido traveled to Venezuela. Here, his passion for food grew even more. He says, “It’s a wonderful world of fruits and spices that makes you feel you don’t want to stop experimenting because you are constantly learning.” In Venezuela, Chef Cándido worked at the most prestigious company in Caracas called Catering La Esmeralda.

Then Chef Cándido moved to Chicago, where he worked in Café Ibérico, Meson Sabika, and finally at the Wyndham International Hotel where he experienced working in all of the different departments of the hotel kitchen.

Since 2005, Cándido moved to Spain and has been working for Sodexo in charge of four centers for five years. Chef Cándido is constantly reading about what’s new in cooking and trying to keep up to date.

Culinary Arts Students Show off their Skills at the Epicurean Experience

MCTC students in the Culinary Arts and Restaurant Management programs got some real-world, hands-on experience this week.

A dozen enthusiastic students prepared, served and talked about food at the U.S. Foodservice Minnesota Epicurean Experience trade show at the Saint Paul RiverCentre on Monday, Sept. 12.

U.S. Foodservice asked MCTC students to be a part of this large annual event. As a result, the students represented the foodservice distributor by showcasing new lines of pizzas and barbequed meats.

The students enjoyed the opportunity to network with a diverse group of regional chefs and other food industry professionals, showcase their skills, sample some amazing food and learn a little bit more about the food industry.
